The winter can be a hard time of year for those of us who live in cold climates. In some respects it’s a lovely season, full of fun winter activities, but for many it’s a time of year where we hibernate, waiting for the first signs of spring. As a nutritionist and allergist, this is a perfect season to focus on mineralizing the body, boosting the immune system and shedding those holiday pounds. To help you get the most from the winter season, I’m sharing an incredible mineralizing soup recipe. This soup, when used medicinally, can help to relieve arthritic pain, reduce skin disorders such as eczema and psoriasis, and boost energy. Along with immune boosters, colloidal silver, Echinacea, astragalus and goldenseal, oil of oregano, reishi mushrooms, probiotics, EFA’s, Vitamin D3, and Vitamin C, this winter healing soup is a sure fire way to fight off colds and flues.

Healing Soup

What you will need:

Chicken pieces, bone-in (free range, pasture, organic, antibiotic free)
e.g. 2 chicken breasts, one thigh

4 inches grated ginger

½ -teaspoon cayenne pepper – or more!

4 Tablespoon extra virgin coconut oil

1 Tablespoon apple cider vinegar

1 box sodium reduced vegetable stock and 4 cups of filtered water

½ green cabbage

3 large Portobello mushrooms, cubed

3 medium onions, chopped

5 carrots, peeled and chopped

3 zucchini, chopped

½ -cup peas

4 celery stalks, chopped

1 small bag green beans

1 bunch parsley

5 garlic cloves

2 Tablespoons Sea Salt

Place chicken pieces in a large pot with the water, vinegar, garlic, ginger, salt, cayenne, coconut oil, and all vegetables coarsely chopped except parsley. Let stand for 10 min. Then heat and bring to boil. Cover and cook for 8-12 hours on simmer. About 15 min. before soup is done add parsley.
 Remove from heat and take out chicken. Remove meat from chicken and discard bones. Purée the soup with a submersion blender and then add pieces of chicken to soup.
